Vegan, Allergy friendly
This one is super quick and easy! Add this to your meal prep and you will be in veggie heaven. There's something about a bowl full of fresh vegetables that grounds me in to my day and gives me the vitality that not other dish can provide.

List of Ingredients
5 cherry tomatoes, halved
1 medium carrot, chopped or shredded
1/2 cup cooked chickpeas
4 cups chopped greens of choice
1 cup chopped broccoli
1/2 cup purple cabbage, shredded
1/4 cup unsalted sunflower seeds
2 tbsp apple cider vinegar
1 tbsp olive oil
Freshly ground black pepper, to taste
Directions:
Combine above ingredients, toss and enjoy :)
Since this recipe yields 2 servings, feel free to store half (with the dressing on the side) in the refrigerator for up to a week.
Eating the Rainbow Challenge
This recipe provides a great place to start but the sky is the limit! Feel free to get creative and find a way to incorporate different colors.
